Osso Buco al Vino Rosso (Osso Buco in Red Wine)
This classic Italian dish of slow-braised veal shanks in a rich red wine sauce is a perfect match for the bold and structured Villa Raiano Taurasi Aglianico DOCG, enhancing its deep flavours and elegant complexity.
Ingredients (Serves 4):- 4 veal shanks, about 4cm thick
- 3 tbsp olive oil
- 1 large onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 cup red wine
- 1 cup beef stock
- 400g canned diced tomatoes
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tbsp fresh thyme, chopped
- Salt and pepper, to taste
- Prepare the Veal: Season the veal shanks with salt and pepper. Heat olive oil in a large pot over medium-high heat and brown the shanks on all sides. Remove and set aside.
- Sauté Vegetables: In the same pot, sauté the onion, carrots, celery, and garlic until softened.
- Deglaze: Add the red wine, scraping up any browned bits from the bottom of the pot. Simmer for 2-3 minutes.
- Add Ingredients: Stir in the beef stock, canned tomatoes, tomato paste, bay leaves, and thyme. Return the veal shanks to the pot.
- Braise: Cover and cook on low heat for 2.5 to 3 hours, or until the veal is tender and falling off the bone. Baste occasionally during cooking.
- Serve: Garnish with fresh parsley and serve with risotto or polenta, accompanied by the rich sauce.
