Montenovo is this producer’s entry-level offering, crafted from massale selection vines propagated from the world’s oldest, ‘baddest’ Godello—the 130+-year-old vines of the Pedrouzos vineyard.
Fashioned from the estate’s younger vineyards spread across the slate-ridden Valdeorran villages of Rubiá, A Rúa, Larouco, Petín and O Bolo, this lays down a seriously impressive marker. Each soil type or plot is vinified separately and malo is suppressed.

Ingredients:
- 12 large scallops
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 garlic clove, minced
- Juice of 1 lemon
- Fresh parsley, chopped
- Salt and pepper, to taste

- Pat scallops dry and season with salt and pepper.
