Description

With its cadre of old vines and magnificent highland terroirs, Valdesil has become a gold-standard source for Godello. Montenovo is this producer’s entry-level offering, crafted from massale selection vines propagated from the world’s oldest, ‘baddest’ Godello—the 130+-year-old vines of the Pedrouzos vineyard.
Fashioned from the estate’s younger vineyards spread across the slate-ridden Valdeorran villages of Rubiá, A Rúa, Larouco, Petín and O Bolo, this lays down a seriously impressive marker. Each soil type or plot is vinified separately and malo is suppressed.

Recipe

Pan-Seared Scallops

Ingredients:

  • 12 large scallops
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 garlic clove, minced
  • Juice of 1 lemon
  • Fresh parsley, chopped
  • Salt and pepper, to taste

Instructions:

  1. Pat scallops dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear scallops for 2 minutes per side until golden brown.
  3. Reduce heat, add butter and garlic, and cook for an additional minute. Finish with lemon juice and parsley.
  4. Serve immediately with a glass of Valdesil Montenovo Blanco.

Tip: Pair with fresh bread or asparagus spears for a delightful meal.
