Recipe

Caponata Siciliana (Sicilian Eggplant Stew)

Ingredients:

  • 2 large eggplants, diced
  • 1 onion, chopped
  • 3 celery stalks, chopped
  • 500g canned diced tomatoes
  • 3 tbsp olive oil
  • 2 tbsp capers
  • 100g green olives, sliced
  • 2 tbsp red wine vinegar
  • 1 tsp sugar
  • Salt and pepper, to taste
  • Fresh basil for garnish

Instructions:

  1. Heat olive oil in a large pan over medium heat. Sauté the eggplant until golden and set aside.
  2. In the same pan, sauté the onion and celery until softened. Add the canned tomatoes, capers, olives, vinegar, sugar, salt, and pepper.
  3. Simmer for 15-20 minutes, stirring occasionally. Return the eggplant to the pan and cook for another 10 minutes to meld the flavours.
  4. Remove from heat and garnish with fresh basil before serving.

Tip: Serve with crusty bread and a chilled glass of Planeta Frappato Sicilia Vittoria for a perfect Sicilian pairing.
