Caponata Siciliana (Sicilian Eggplant Stew)
Ingredients:
- 2 large eggplants, diced
- 1 onion, chopped
- 3 celery stalks, chopped
- 500g canned diced tomatoes
- 3 tbsp olive oil
- 2 tbsp capers
- 100g green olives, sliced
- 2 tbsp red wine vinegar
- 1 tsp sugar
- Salt and pepper, to taste
- Fresh basil for garnish
Instructions:
- Heat olive oil in a large pan over medium heat. Sauté the eggplant until golden and set aside.
- In the same pan, sauté the onion and celery until softened. Add the canned tomatoes, capers, olives, vinegar, sugar, salt, and pepper.
- Simmer for 15-20 minutes, stirring occasionally. Return the eggplant to the pan and cook for another 10 minutes to meld the flavours.
- Remove from heat and garnish with fresh basil before serving.
