Recipe

Eggplant Caponata

Ingredients:

  • 2 medium eggplants, diced
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1/2 cup olives, sliced
  • 2 tbsp capers
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 tbsp sugar
  • 1 can diced tomatoes
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a pan and sauté eggplant until golden. Remove and set aside.
  2. In the same pan, sauté onion, celery, and capers until softened. Add tomatoes, olives, vinegar, and sugar.
  3. Simmer for 10 minutes, then return eggplant to the pan. Cook for another 5 minutes.
  4. Season with salt and pepper and serve warm or at room temperature.
