Braised Beef with Red Wine
Ingredients:
- 1kg beef chuck, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups red wine
- 1 cup beef stock
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 sprigs thyme
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pot. Brown beef chunks on all sides and set aside.
- Sauté onion and garlic until softened. Add wine, beef stock, and thyme. Bring to a simmer.
- Return beef to the pot, add carrots and celery, and season with salt and pepper.
- Cover and simmer on low heat for 2-3 hours, or until beef is tender. Serve warm.
