Petto d'Anatra con Salsa ai Frutti di Bosco (Duck Breast with Berry Sauce)
Ingredients:
- 2 duck breasts
- 1/2 cup mixed berries (blueberries, raspberries, or blackberries)
- 1/4 cup dry red wine (preferably Cerasuolo d'Abruzzo)
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Fresh thyme, for garnish
Instructions:
- Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat.
- Season both sides with salt and black pepper.
- Heat a pan over medium heat and place the duck breasts skin-side down. Cook for 5-7 minutes until the skin is crispy.
- Flip the duck and cook for another 4-5 minutes for medium-rare (or longer if preferred).
- Remove from the pan and let rest for 5 minutes before slicing.
- In the same pan, add the mixed berries, red wine, balsamic vinegar, and honey. Cook for 3-4 minutes until slightly reduced.
- Slice the duck and drizzle with the berry sauce.
- Garnish with fresh thyme and serve immediately.
