Lobster Bisque
Ingredients:
- 2 lobster tails
- 2 tbsp butter
- 1 onion, diced
- 2 garlic cloves, minced
- 1/2 cup dry white wine
- 2 cups seafood stock
- 1/2 cup heavy cream
- 1 tbsp tomato paste
- Salt and pepper, to taste
Instructions:
- Cook lobster tails in boiling water for 5 minutes. Remove meat and set aside, reserving shells.
- Sauté onion and garlic in butter until softened. Add lobster shells, tomato paste, and white wine. Simmer for 5 minutes.
- Add seafood stock and cook for 20 minutes. Remove shells and blend soup until smooth.
- Stir in cream and season with salt and pepper. Add lobster meat and heat gently before serving.
