Recipe

Lobster Bisque

Ingredients:

  • 2 lobster tails
  • 2 tbsp butter
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 2 cups seafood stock
  • 1/2 cup heavy cream
  • 1 tbsp tomato paste
  • Salt and pepper, to taste

Instructions:

  1. Cook lobster tails in boiling water for 5 minutes. Remove meat and set aside, reserving shells.
  2. Sauté onion and garlic in butter until softened. Add lobster shells, tomato paste, and white wine. Simmer for 5 minutes.
  3. Add seafood stock and cook for 20 minutes. Remove shells and blend soup until smooth.
  4. Stir in cream and season with salt and pepper. Add lobster meat and heat gently before serving.
