Risotto al Tartufo (Truffle Risotto)
Ingredients:
- 1 cup Arborio rice
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 4 cups chicken or vegetable stock, heated
- 1/2 cup white wine
- 2 tbsp truffle oil
- 50g grated Parmigiano Reggiano
- 1 tbsp butter
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions:
- Heat butter in a pan over medium heat. Sauté the onion and garlic until softened.
- Add the rice and toast for 2 minutes, stirring frequently. Deglaze with white wine and stir until absorbed.
- Add the stock one ladle at a time, stirring continuously and allowing the liquid to absorb before adding more.
- Once the rice is creamy and al dente, remove from heat and stir in truffle oil and Parmigiano Reggiano. Season with salt and pepper.
- Serve hot, garnished with fresh parsley and an extra drizzle of truffle oil if desired.
