Spinach and Goat Cheese Tart
Ingredients:
- 1 sheet puff pastry
- 200g fresh spinach, chopped
- 150g goat cheese, crumbled
- 2 eggs
- 1/2 cup cream
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Preheat oven to 180°C. Line a tart pan with puff pastry and prick the base with a fork.
- Heat olive oil in a pan. Sauté spinach until wilted. Allow to cool slightly.
- In a bowl, whisk eggs and cream. Season with salt and pepper.
- Layer spinach and goat cheese in the tart shell. Pour over the egg mixture.
- Bake for 25-30 minutes until golden and set. Serve warm.
