Risotto al Limone e Erbe (Lemon and Herb Risotto)

This creamy and aromatic risotto, infused with fresh lemon and Mediterranean herbs, pairs beautifully with the vibrant acidity and refined character of Pala Stellato Vermentino di Sardegna 2021.

Ingredients (Serves 4):
  • 300g Arborio rice
  • 2 lemons (zest and juice)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 cup dry white wine
  • 1L vegetable stock, kept warm
  • 50g Parmesan cheese, grated
  • 2 tbsp butter
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh thyme, chopped
  • Salt and pepper, to taste
Instructions:
  1. Sauté Aromatics: Heat olive oil in a large pan over medium heat. Sauté the onion and garlic until softened.
  2. Toast the Rice: Add the Arborio rice to the pan and stir for 2 minutes until lightly toasted.
  3. Deglaze with Wine: Pour in the white wine and cook until absorbed, stirring frequently.
  4. Add Stock Gradually: Add the warm vegetable stock, one ladle at a time, stirring continuously. Allow each ladle to be absorbed before adding the next. Continue for about 18-20 minutes, until the rice is tender but al dente.
  5. Finish: Stir in the lemon juice, zest, Parmesan cheese, butter, parsley, and thyme. Season with salt and pepper to taste.
  6. Serve: Plate the risotto and garnish with additional Parmesan and fresh herbs.
