Grilled Prawns with Lemon
Ingredients:
- 500g large prawns, peeled and deveined
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 lemon, zest and juice
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- In a bowl, combine olive oil, garlic, lemon zest, lemon juice, smoked paprika, oregano, salt, and pepper. Whisk to create a marinade.
- Marinate the prawns in the mixture for at least 30 minutes.
- Preheat a grill or grill pan over medium heat. Cook the prawns for 2–3 minutes per side, or until pink and slightly charred.
- Remove from the grill and garnish with fresh parsley. Serve immediately with lemon wedges on the side.
Tip: Serve over a bed of arugula or alongside crusty bread for a complete dish.
