Grilled Prawns with Lemon

Ingredients:

  • 500g large prawns, peeled and deveined
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 lemon, zest and juice
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. In a bowl, combine olive oil, garlic, lemon zest, lemon juice, smoked paprika, oregano, salt, and pepper. Whisk to create a marinade.
  2. Marinate the prawns in the mixture for at least 30 minutes.
  3. Preheat a grill or grill pan over medium heat. Cook the prawns for 2–3 minutes per side, or until pink and slightly charred.
  4. Remove from the grill and garnish with fresh parsley. Serve immediately with lemon wedges on the side.

Tip: Serve over a bed of arugula or alongside crusty bread for a complete dish.
