Ingredients:
  • 200g fresh green beans, trimmed
  • 4 medium potatoes, boiled and quartered
  • 4 hard-boiled eggs, halved
  • 1 punnet cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 cup black olives
  • 2 tins tuna in olive oil, drained
  • 4 cups mixed salad greens
  • 2 tbsp capers (optional)
Dressing:
  • 4 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste
Instructions:
  1. Prepare Dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
  2. Blanch Green Beans: Cook green beans in boiling water for 2-3 minutes until tender-crisp. Drain and rinse under cold water to stop cooking.
  3. Assemble Salad: On a large platter or individual plates, arrange salad greens. Top with potatoes, green beans, cherry tomatoes, red onion, olives, tuna chunks, hard-boiled eggs, and capers if using.
