Ingredients:- 200g fresh green beans, trimmed
- 4 medium potatoes, boiled and quartered
- 4 hard-boiled eggs, halved
- 1 punnet cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 cup black olives
- 2 tins tuna in olive oil, drained
- 4 cups mixed salad greens
- 2 tbsp capers (optional)
- 4 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
- Prepare Dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
- Blanch Green Beans: Cook green beans in boiling water for 2-3 minutes until tender-crisp. Drain and rinse under cold water to stop cooking.
