Pintade aux Olives et Herbes de Provence (Guinea Fowl with Olives and Provençal Herbs)
This classic Provençal dish features tender guinea fowl (or chicken) braised with olives, garlic, and aromatic herbs. The wine’s bright red fruit, soft tannins, and herbal notes perfectly complement the savoury, herby flavours of the dish while enhancing its delicate texture.
Ingredients (Serves 4-6):- 1 whole guinea fowl (or 1.5kg chicken), jointed
- 2 tbsp extra virgin olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 carrots, peeled and sliced
- 150ml dry white wine
- 200ml chicken stock
- 2 tbsp tomato paste
- 1 bay leaf
- 1 tsp Herbes de Provence
- 1 sprig fresh thyme
- 100g green olives, pitted
- Salt and freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish
- Crusty bread or roasted potatoes, for serving
- Brown the Poultry: Heat olive oil in a large pan over medium heat. Season the guinea fowl or chicken with salt and pepper, then sear on all sides until golden. Remove and set aside.
- Sauté the Vegetables: In the same pan, cook the onion, garlic, and carrots until softened.
- Deglaze with Wine: Pour in the white wine, scraping up any browned bits from the pan. Let it reduce slightly.
- Braise the Poultry: Return the guinea fowl to the pan and add the chicken stock, tomato paste, bay leaf, thyme, and Herbes de Provence. Cover and simmer on low heat for 45 minutes.
- Add the Olives: Stir in the green olives and cook uncovered for another 10 minutes to allow the flavours to meld.
- Serve: Garnish with fresh parsley and serve with crusty bread or roasted potatoes.
