Ingredients (Serves 4):
  • 1 whole chicken (approximately 1.5kg)
  • 3 tbsp olive oil
  • 1 tbsp Herbes de Provence
  • 2 garlic cloves, minced
  • 1 lemon, halved
  • Salt and freshly ground black pepper, to taste
  • 2 sprigs fresh thyme (optional)
  • Vegetables for roasting (e.g., potatoes, carrots, onions)
Instructions:
  1. Prepare the Chicken: Preheat the oven to 200℃. Pat the chicken dry with paper towels. Rub the chicken with olive oil, Herbes de Provence, minced garlic, salt, and pepper.
  2. Stuff the Chicken: Place the lemon halves and thyme sprigs inside the cavity of the chicken.
  3. Roast the Chicken: Place the chicken in a roasting pan, surrounded by your choice of vegetables. Roast for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 75℃ and the skin is golden and crispy. Baste occasionally with the pan juices.
  4. Rest and Serve: Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with the roasted vegetables and pan juices.
