Choucroute Garnie (Alsatian Sauerkraut with Meat)
Ingredients:
- 1kg sauerkraut, rinsed and drained
- 1 onion, finely sliced
- 2 garlic cloves, minced
- 2 tbsp duck fat or butter
- 1 bay leaf
- 6 juniper berries (lightly crushed)
- 1 cup white wine (Gewurztraminer recommended)
- 250g smoked bacon or speck, cut into chunks
- 4 smoked sausages (e.g., Montbéliard or Frankfurter)
- 4 small pork cutlets or 4 slices of smoked pork belly (optional)
- Salt and pepper, to taste
- Boiled potatoes, to serve
Instructions:
- Preheat a large casserole dish over medium heat and melt the duck fat or butter.
- Sauté the onion until translucent, then add the garlic, sauerkraut, bay leaf, and juniper berries.
- Pour in the white wine and stir gently. Nestle the bacon or speck chunks into the sauerkraut mixture.
- Season with salt and pepper (note that smoked meats can be quite salty). Cover and simmer over low heat for about 30 minutes, stirring occasionally.
- Add the smoked sausages and pork cutlets (if using), then continue to simmer for another 20–30 minutes until the meats are cooked through and flavours have melded.
- Serve hot with boiled potatoes on the side. This hearty dish is beautifully complemented by the aromatic intensity of Domaine Albert Mann Gewurztraminer.
