Recipe

Choucroute Garnie (Alsatian Sauerkraut with Meat)

Ingredients:

  • 1kg sauerkraut, rinsed and drained
  • 1 onion, finely sliced
  • 2 garlic cloves, minced
  • 2 tbsp duck fat or butter
  • 1 bay leaf
  • 6 juniper berries (lightly crushed)
  • 1 cup white wine (Gewurztraminer recommended)
  • 250g smoked bacon or speck, cut into chunks
  • 4 smoked sausages (e.g., Montbéliard or Frankfurter)
  • 4 small pork cutlets or 4 slices of smoked pork belly (optional)
  • Salt and pepper, to taste
  • Boiled potatoes, to serve

Instructions:

  1. Preheat a large casserole dish over medium heat and melt the duck fat or butter.
  2. Sauté the onion until translucent, then add the garlic, sauerkraut, bay leaf, and juniper berries.
  3. Pour in the white wine and stir gently. Nestle the bacon or speck chunks into the sauerkraut mixture.
  4. Season with salt and pepper (note that smoked meats can be quite salty). Cover and simmer over low heat for about 30 minutes, stirring occasionally.
  5. Add the smoked sausages and pork cutlets (if using), then continue to simmer for another 20–30 minutes until the meats are cooked through and flavours have melded.
  6. Serve hot with boiled potatoes on the side. This hearty dish is beautifully complemented by the aromatic intensity of Domaine Albert Mann Gewurztraminer.
