Recipe

Coq au Vin Beaujolais (Chicken in Beaujolais Wine)

Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups Domaine Laurent-Savoye Beaujolais
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 garlic cloves, minced
  • 200g button mushrooms, sliced
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 2 sprigs thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a large pot and brown the chicken pieces on all sides. Remove and set aside.
  2. Sauté onions, carrots, and garlic in the same pot until softened. Stir in tomato paste and cook for 1 minute.
  3. Deglaze the pot with Beaujolais wine, scraping up any browned bits.
  4. Return the chicken to the pot and add mushrooms, thyme, bay leaf, salt, and pepper.
  5. Cover and simmer for 45 minutes, or until the chicken is tender and infused with the flavours of the wine.
  6. Serve hot with crusty bread or creamy mashed potatoes.
