Coq au Vin Beaujolais (Chicken in Beaujolais Wine)
Ingredients:
- 1 whole chicken, cut into pieces
- 2 cups Domaine Laurent-Savoye Beaujolais
- 1 onion, chopped
- 2 carrots, sliced
- 3 garlic cloves, minced
- 200g button mushrooms, sliced
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 2 sprigs thyme
- 1 bay leaf
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pot and brown the chicken pieces on all sides. Remove and set aside.
- Sauté onions, carrots, and garlic in the same pot until softened. Stir in tomato paste and cook for 1 minute.
- Deglaze the pot with Beaujolais wine, scraping up any browned bits.
- Return the chicken to the pot and add mushrooms, thyme, bay leaf, salt, and pepper.
- Cover and simmer for 45 minutes, or until the chicken is tender and infused with the flavours of the wine.
- Serve hot with crusty bread or creamy mashed potatoes.
