Recipe

Creamy Mushroom Risotto

Ingredients:

  • 1 cup Arborio rice
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup white wine
  • 3 cups chicken or vegetable stock
  • 1 cup mushrooms, sliced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a pan and sauté onion and garlic until soft.
  2. Add rice and cook for 2 minutes. Pour in white wine and stir until absorbed.
  3. Gradually add stock, one ladle at a time, stirring until absorbed before adding more.
  4. In a separate pan, sauté mushrooms in butter and set aside.
  5. Once the rice is creamy and tender, stir in mushrooms, Parmesan, and season with salt and pepper.

Tip: Serve with Complices de Loire Vouvray for a harmonious pairing.
