Spaghetti al Pomodoro e Basilico (Spaghetti with Tomato and Basil)

Ingredients

  • 400g spaghetti
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, thinly sliced
  • 800g ripe tomatoes (or 1 tin of crushed tomatoes)
  • Sea salt, to taste
  • Freshly ground black pepper
  • A pinch of sugar (optional, to balance acidity)
  • A generous handful of fresh basil leaves, roughly torn
  • Grated Parmigiano-Reggiano (optional, for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the packet instructions until al dente. Reserve a cup of pasta water before draining.
  2. Meanwhile, heat the olive oil in a large frying pan over medium heat. Add the garlic and gently sauté until it turns golden, being careful not to burn it.
  3. If using fresh tomatoes, roughly chop them and add to the pan. If using tinned tomatoes, pour them in along with their juices. Stir well to combine with the garlic.
  4. Allow the sauce to simmer gently for 10-15 minutes. Season with sea salt, freshly ground black pepper, and a pinch of sugar if needed.
  5. Toss the cooked spaghetti into the sauce, adding a splash of the reserved pasta water to help the sauce adhere to the pasta.
  6. Fold in the fresh basil leaves just before serving. Top with grated Parmigiano-Reggiano if desired.
