Osso Buco alla Milanese
Ingredients:
- 4 veal shanks
- 1 cup white wine
- 1 cup beef stock
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Season veal shanks with salt and pepper. Heat olive oil in a large pot and brown the shanks on all sides. Remove and set aside.
- Sauté onion, carrots, celery, and garlic in the same pot until softened.
- Stir in tomato paste and cook for 1 minute. Add white wine and reduce by half.
- Return the shanks to the pot and pour in beef stock. Simmer gently for 2 hours, or until tender.
- Serve with saffron risotto or polenta.
Tip: Garnish with gremolata (a mix of lemon zest, parsley, and garlic) for extra flavour.
