Recipe

Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 egg
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Place grated zucchini in a clean towel and squeeze out excess moisture.
  2. Mix zucchini with Parmesan, flour, egg, salt, and pepper in a bowl.
  3. Heat olive oil in a skillet over medium heat. Drop spoonfuls of the mixture into the skillet and flatten slightly.
  4. Cook for 2–3 minutes on each side until golden brown. Drain on paper towels.
  5. Serve warm with a dollop of sour cream or Greek yogurt.

Tip: Add chopped fresh mint or dill for extra flavour.
