Eggplant Parmigiana
Ingredients:
- 2 large eggplants, sliced
- 1 cup tomato passata
- 1 cup grated Parmesan cheese
- 1 cup mozzarella cheese, shredded
- 1/4 cup olive oil
- 1/4 cup fresh basil leaves
- Salt and pepper, to taste
Instructions:
- Preheat oven to 200°C. Brush eggplant slices with olive oil and bake until golden.
- Layer baked eggplant, tomato passata, Parmesan, and mozzarella in a baking dish.
- Repeat layers and top with remaining cheese.
- Bake for 20-25 minutes until bubbling and golden. Garnish with fresh basil.
